
Offbeat Wines is the winemaking project of Daniel and Dr. Nicola Ham, whose path into wine was shaped not by tradition, but by curiosity, science, and a deep respect for natural systems.
Both Daniel and Nicola arrived at wine through unconventional routes: both trained as marine biologists, with careers rooted in scientific research and a deep understanding of natural systems. While working overseas, particularly in New Zealand, Daniel was drawn to winemaking as a hands-on way to engage with agriculture, ecology, and seasonality. What began as curiosity soon became a vocation, leading him to study winemaking at Plumpton College, and then to hands-on experience at practical leading English estates including Ridgeview and Langham.
That combination of scientific thinking and cellar experience laid the foundation for Offbeat Wines: a project built on careful observation rather than prescription, and on understanding when to act and when not to. From the outset, Dan and Nicola sought wines that clearly reflect their origins and the nuances of each season, shaped by careful restraint rather than overt technique.
A defining moment in the evolution of Offbeat came in 2018, when Dan met Hugo Stewart of Domaine Hugo. Shared values around low-intervention farming, patience in the cellar, and working in harmony with nature led to the opportunity to convert a barn at Botley’s Farm, home to Domaine Hugo, into a dedicated winery. This gave Offbeat Wines a permanent home, along with the space and independence to pursue this style of winemaking with greater focus and intention.
Working from this biodynamic estate, Offbeat Wines has, from the outset, embraced an experimental, low-intervention approach. Fruit is sourced from growers the Hams respect, often farmed organically or biodynamically. In the winery, they take a minimal-intervention approach. Fermentations occur spontaneously using native yeasts, the wines are bottled by gravity, and sulphur is used only when essential. This reflects their belief that winemaking should support and clarify what is already present, rather than alter it to fit a predefined mold.


The name Offbeat reflects this philosophy perfectly, a gentle step away from convention, guided by curiosity rather than trend. It speaks to a willingness to experiment thoughtfully, to remain open to variation, and to trust the natural process over rigid formulas.
Today, Offbeat Wines stands as a leading voice in England’s evolving minimal-intervention movement, their approach recognized as thoughtful, precise, and deeply rooted in place. It is a project defined not by scale or spectacle, but by intention, and by the belief that the most compelling wines are those given the time and space to find their own unique voice.
